Ingredients

  • homemade pesto
  • angel hair pasta
  • large diver scallops
  • Kosher salt
  • pepper
  • some confectioner sugar
  • fresh basil
  • fresh grated parmesan cheese
  • olive oil

Directions

I use my homemade pesto (recipe below) then cook  angel hair pasta according to the directions, cool it with cold water to stop the cooking then toss in the pesto and put it in a container. It is good for a few days perfect for any cold pasta.

Take your scallops and season on one side with kosher salt and pepper and I know weird but some confectioner sugar on it as well. This help caramelize it. I seared them off in hot pan/olive oil on one side for about 90 percent of the cooking about 3 min or so turn over and cook for 30 seconds.

To plate place some of the pesto angel hair pasta in a bowl followed by the scallops and finish with some fresh basil, Parmesan cheese and  olive oil.

Perfect summer lunch kids!

You can use shrimp chicken anything you like will work great .

Simple Pesto:

2 cups basil leaves

2 tablespoons grated Parmesan cheese

one clove of garlic

1/4 cup olive oil

tablespoon pine nuts

Combine all ingredients into a food processor and blitz until smooth.
