Here is a great single serving Paella that I make often for myself. Takes almost no time and you deserve something special like this....well all the time. I used some clams and shrimp that I had but you can add any other fish, muscles etc. Never mind going to a Spanish restaurant and getting that overpriced paella for $24 you can make this at home for next to nothing. You will need a single serving paella pan or you can use a small frying pan that will work as well.

Ingredients

  • 1/2 cup short grain rice I like to use alborio
  • one small onion choppedone glove of garlic chopped
  • tablespoon tomato paste
  • 1/2 cup chicken stock
  • kosher salt and pepper
  • choice of shell fish I used three cleaned large uncooked shrimp and three clams
  • olive oil

Directions

Start with you pan on medium heat and add a good glug of olive oil and add the onions , garlic and some kosher salt and pepper and  stir often until they become translucent but with no color.

Now add the rice and start toasting it a little you will see it starting to soak up the oil after about 3 min or so add the tomato paste and cook that out for about 3-4 min to get the raw flavor out of it and to have the rice start to absorb some of it tomato.

Make sure the rice is evenly coating the bottom of the pan and add the chicken stock and nuzzle in the clams and shrimp. Turn the heat down to low and cover with foil tightly and don’t look for at least 15 min. During this time the rice will absorb the liquid and the rice on the bottom will get this nice crunchy texture.

Check after 15 min and check the rice it should be done or almost done. if it seems like it needs a little more chicken stock add a little if its ready then uncover it let cook for another min and serve.

You cant go wrong with this and its just crazy with flavor. I like to have a great glass of wine and some crusty bread with this.
