Simple beautiful way of enjoying salmon and rich tomato compote. I seared the salmon the same way you would for sashimi and finished it with fresh herbs and tomato compote. This one is perfect for a light lunch, perfect for sharing.

Ingredients

  • Sushi grade salmon
  • One large tomato
  • Olive oil
  • Kosher salt
  • Sesame chili oil
  • Herb mix

Directions

Start by skinning you tomato and removing the seeds, now in a small sauce pan crush the tomato, add a pinch of kosher salt and a good gulp of olive oil. Cook out for about 10-15 min and then start reducing until you have a tomato jam.
Set aside and cool, add another splash of olive oil if it’s not luscious enough.

Now cut the salmon into a long filet and prepare an ice bath. Sear the salmon in a hot pan with canola oil about 45 seconds on each side then plunge into the ice bath to stop the cooking.

To plate slice a few pieces of the salmon and arrange on the plate as I’ve done, now spoons some of the tomato compote on top and finish with the fresh herbs and a few drops of chili sesame oil and that’s it. Easy stuff….
