Shrimp and onion tortilla

- ½ cup Chick pea or garbanzo bean flour
- ½ cup of regular flour
- ½ cup water
- 1/3 cup chopped spring onions
- Pinch or kosher salt
- Crushed black pepper
- Cooked shrimp
- 1 glove chopped garlic
Combine the 2 flours and water and make almost a pancake like batter, it should be fairly thin batter. Now add a pinch of kosher salt and black pepper.
Add the garlic, spring onions and shrimp mixing well. Let rest for at least ten min.
In a hot pan put a liberal amount of olive oil and let heat up to just before smoking. Using a ladle put the mixture in the pan and cook on one side for about 2 min.
Check to make sure its golden brown before flipping. Cook on the other side for an additional 60-90 seconds.
Put on a rack to cool for 5 min then cut and plate. Simple stuff great to keep around on a Sunday to snack on.
