Here is a quick and easy Italian Tortilla that I love to make and leave around the house as a snack. This one is good at room temperature as well. A lot of Italian homes will make several frittatas, focaccia and dishes like this that will set on the counter for anyone who is a little peckish. Simple stuff let’s give this one a try.

  • ½ cup Chick pea or garbanzo bean flour
  • ½ cup of regular flour
  • ½ cup water
  • 1/3 cup chopped spring onions
  • Pinch or kosher salt
  • Crushed black pepper
  • Cooked shrimp
  • 1 glove chopped garlic


Combine the 2 flours and water and make almost a pancake like batter, it should be fairly thin batter. Now add a pinch of kosher salt and black pepper.
Add the garlic, spring onions and shrimp mixing well. Let rest for at least ten min.

In a hot pan put a liberal amount of olive oil and let heat up to just before smoking. Using a ladle put the mixture in the pan and cook on one side for about 2 min.

Check to make sure its golden brown before flipping. Cook on the other side for an additional 60-90 seconds.
Put on a rack to cool for 5 min then cut and plate. Simple stuff great to keep around on a Sunday to snack on.
