Great summer lunch sandwich. I love the underlying taste of Old Bay which give it that crab and shrimp boil taste. You can make this a head of time and just assemble it when needed. This is also a great salad on its own. Add to it some more shredded Napa cabbage on a plate and your good to go.

Ingredients

  • one pound of cooked shrimp
  • 2 cups shredded napa cabbage
  • one large tomato chopped
  • juice of one lemon
  • 3 tablespoons good mayo Japanese Mayo works great
  • 3/4 teaspoon Old Bay Seasoning

Directions

Start with your cooked shrimp and give them a rough chop so they are all about the same size pieces. now everyone into the pool, add the tomatoes, Napa cabbage, lemon juice, Old Bay and the mayo (start with less mayo and add a little at a time to not OVER MAYO)

Mix together well and check for seasoning and into the fridge until you are ready to serve.

Use a good potato roll is what I like for my bread, put a little butter on both sides and into an oven to toast it up. You can use any bread you like but I like the sweetness a potato roll brings to the table.  Alternatively you can just add this salad to some more greens and eat it as a salad on its own. I finished with some micro greens and some Tabasco sauce. Works for me!
