Really great inexpensive meal that is healthy and delicious. One of my favorite late night meals if i ave been up working late. Low carbs, and packed with flavor. You can leave the shrimp out and substitute it with an egg that you can cook on top at the last min and round it out with some brown rice if your feeding a hungry bunch.

Ingredients

  • one cup medium diced squash
  • one cup medium diced zucchini
  • one cup medium diced onion
  • 2 garlic cloves minced
  • tablespoon of tomato paste
  • one cup chopped shrimp can be cooked or raw
  • olive oil
  • kosher salt and pepper
  • grated Parmesan cheese

Directions

Start with a hot pan add some olive oil and start cooking the diced vegetables and garlic with a little kosher salt and pepper for a few min until they start to release some of their juice.

Now add the tomato paste and cook it for 3-5 min until its breaks down and starts to become a part of the vegetable. Now add the shrimp and continue cooking until the juice starts to thicken up and become part of the vegetables. Check for seasoning and finish with a little grated Parmesan cheese and some crushed chili for heat.
