Ingredients
- one cup medium diced squash
- one cup medium diced zucchini
- one cup medium diced onion
- 2 garlic cloves minced
- tablespoon of tomato paste
- one cup chopped shrimp can be cooked or raw
- olive oil
- kosher salt and pepper
- grated Parmesan cheese
Directions
Start with a hot pan add some olive oil and start cooking the diced vegetables and garlic with a little kosher salt and pepper for a few min until they start to release some of their juice.
Now add the tomato paste and cook it for 3-5 min until its breaks down and starts to become a part of the vegetable. Now add the shrimp and continue cooking until the juice starts to thicken up and become part of the vegetables. Check for seasoning and finish with a little grated Parmesan cheese and some crushed chili for heat.
