Simple Tomato Soup

- 3 large tomatos
- three cloves of garlic
- one small onion
- handful fresh basil leaves
- 1 teaspoon kosher salt and pepper
- teaspoon sugar
- teaspoon smoked paprika optional
- 2 cups chicken stock
- 1/4 cup olive oil
Cut up the tomato and onion into chunks, add to a roasting pan along with the rest of the ingredients (minus the chicken stock) and into a 425degre oven and roast until the tomatoes and onion are getting a little char on them.
Transfer to a pot with the chicken stock and using a hand blender blitz until smooth about one min (less if you want more chunky and rustic)
Put back on the stove and reduce until you have a perfect flavor and thickness to the soup. Serve with a little fresh basil and some cheese bread.
