Squid in Spicy Tomato Sauce

Ingredients
- one pound Cleaned squid tubes
- one can tomato paste
- one cup white wine
- 1 clove garlic chopped
- 1 shallot chopped
- 1 tablesoon capers rinsed
- 1 chilie chopped
Directions
Method:
Clean and cut the squid into rings and set aside.
Now in a hot pan with olive oil combine the garlic, shallots and chili, capers and sauté until starting to caramelize. Add the white wine and reduce until it almost dry followed by the tomato paste. Cook the tomato paste for 3-4 min to break it down and now add the squid and stir until coated with the tomato and spread out so its one layer. Let cook for 10 min on one side you will hear some popping and see the edges of the squid get nice and dark from the tomato you want that. Now finish the other side of the squid about 5 min and add a handful of chopped parsley.
Plate and add a little more parsley and to take it another level I fried some of the tentacles by dredging them in a little flour and into hot oil for about a min. Then chopped them up and put them on top for some crunch and man that worked!. Try this one the squid will be perfectly tender and out of this world flavor!
