Keeping with the theme of perfect bits here is one that I just wanted that it never ended and just kept going. I remember being in Costa Rica and eating at this amazing restaurant in the Marriott hotel that was a Spanish tapas bar. They served me a dish that was a nice cube of rib eye with some manchego cheese melted on top with a one bite of mash potatoes. What is great about tapas in a lot of time they are made up of leftovers from the night before, just like ravioli with the Italians. So I was inspired and came up with this baby that I finish with some crispy onion….mmmmmm mmmmm good.

Ingredients

  • Left over rib streak or any other cut you have
  • queso fresco cheese
  • Fried onions
  • Left over potato

Directions

Slice the steak thin as you can, do the same with the queso fresco cheese and I also sliced the potato to be the same thickness as the cheese and steak. Just start layering in a mold of your choice.

I started with the potato, then half cheese have steak and continue until you get to the top. I top with some more of the cheese and melt it with a blow torch and finish off with some really nice fried onions and micro greens.

This baby is two bits of steak heaven. Nothing like that perfect bite and this one works perfect for me.
