Here is a light and healthy dinner option if you are looking for low carb meal and fantastic taste then this is the way serve a great piece of whitefish. It’s practically low fat but with only olive oil being used it’s a healthy alternative to a macadamia crusted piece of mahi mahi cooked in butter. The booster in the flavor is the lemon aioli that you serve with it. This is very easy to make and you can even use an inexpensive piece of fish like Pollock works fantastic.

Ingredients

  • 6 oz. filet of your favorite white fish
  • One leak trimmed and cleaned
  • Olive oil
  • Kosher salt
  • Fresh cracked pepper
  • Good quality mayonnaise
  • Juice of one lemon
  • Chives
  • Bamboo steamer

Directions

Start by making the lemon aioli by juicing a lemon into a small pan and with medium heat reduce the juice until it becomes syrup like consistency.
Now put this in a dish let cool and add ½ cup of good mayonnaise and mix together and set in fridge until ready to use.

Take your leeks split them in half and put them in a pan, add a good glug of olive oil, a splash of dry white wine then season with salt and pepper.
Now into a 400 degree oven for about 15-120 until there is some char on the tops, the liquid has reduced and they are tender , cover with foil and set aside.

Now take your fish and steam it with a little kosher salt on it and put a lemon wedge in the water and in the steamer. For a 6 oz. piece steam about 12-15 min.
To assemble take the leeks and remove the outer skin that has dried from the roasting so your left with the tender part only.
Cut the leeks so they are roughly the same size as the fish now lay the fish on top and drizzle any liquid from pan on top.

Plate the lemon aioli on the side and finish with some chopped chives on the fish and the aioli. That’s it, easy takes 30 min to make and its healthy and delicious and practically no carbs!
