This is my version of a classic Jewish Potato Latkes. I decided to use a sweet potato for this one and I love the little sweet that it gives the dish. This is not a kosher dish because of the egg that I used on top but I did consult with some Jewish friends and the ones not 100% practicing eating kosher said most will not have a problem as there is no meat in this dish With that said here is how I put together this delicious pretty looking Sweet Potato Latke.

Sweet Potato Latkes

Ingredients

  • One large sweet potato
  • One small onion
  • One egg
  • Chopped chives
  • Crème fresh
  • Kosher Salt
  • One beaten egg

Directions

I start by grating the sweet potato and the onion and mixing them. I then soak it cold water for at least 30 min then I squeeze all the water out until it is a very dry mixture.

I then add half a beaten egg and mix until there is a slight binding of the potato and can be formed in my hand.
Hot pan olive oil and I used a ring mold to shape it but not necessary I fried it on medium heat until the one side was golden brown and the potato could slid on its own in the pan. Turn it over and finish the other side about 2 min then take out season and keep warm in oven at 200 degrees.

In another pan fry one egg sunny side up season the egg as well. Now to plate add the egg to the top of the crispy potato latke, finish with chives and serve with some crème fresh on the side or sour cream.
