The Perfect Tuna Melt

- 8 oz Fresh tuna
- 2 tablespoons good mayo
- Teaspoon Tabasco chipotle sauce
- Juice of half a lemon
- Unsalted butter
- Kosher pickles
- Sharp cheddar cheese
- Kosher salt and pepper
- Good quality sturdy bread
Cut the tuna into chunks and roast with some olive oil on them for about 10 min @ 350 until fully cooked, but aside and cool.
In another bowl combine the mayo, chipotle and lemon juice and mix well. Now break up the tuna with a fork almost like pulled pork and add the mayo mixture is incorporated and the ratio is to your taste now take your bread and cut off the crusts as you can see in my photo and make sure you have 2 equal size pieces.
Put a perfect layer of tuna across the piece of bread so it goes right to the edge and covers the bread and is even thickness all the way around this is important. Now layer your favorite pickle on top the same way followed by a lawyer of sharp cheddar cheese. Put the top bread on and now in a hot pan put a generous amount of butter let it start to foam and add the sandwich.
Grill for a few min checking until it is golden brown and turn over and put in a 350 degree oven for about 10-15 min until you can see the cheese is melted and its golden brown on the bottom. Remove and let rest for a couple min before cutting. Serve with some greens and drizzle a little more of the mayo around the plate and ENJOY!
I actually drizzled a little honey on mine but some people think I have eccentric tastes at times ..I think its amazing flavor.
