If you thought tilapia was only good for frying check this out. This white fish provides an amazing background for some fresh flavors for a perfect summer starter. Any firm white fish will work for this like turbot so find a fish you like its taste and when you ceviche the fish will go to another level….here is the 411..

Ingredients

  • Fresh Tilapia
  • Juice of one orange or tangerine
  • Juice of 3 fresh limes
  • Thinly slice onion
  • One garlic clove chopped
  • Kosher salt
  • Ground black pepper
  • Crushed red chills
  • Smoked paprika
  • Chives and radish sprouts to finish
  • Fried pita chips
  • 3 tablespoon miram or rice wine vinegar

Directions

Cut the fish into small chunks and set aside in the fridge.

Now take the sliced onion and put it in ice cold water to remove some of the strong taste and make them sweeter. In a bowl combine the orange, lime, onions, garlic, miram and olive oil and salt and pepper to taste. Mix well together and pour over the fish and let marinade anywhere from 5 min to several hours. Now you can serve this several ways I used a ring mold but if you don’t have one then just put the fish nicely on a plate.

Garnished with some fried pita chips finish with some chives and I used some radish sprouts as well. I also finished with a little olive oil and smoked paprika. This is light refreshing and very healthy!
