Using the inspiration of Michael Gochnour Bandiola Steak Spice Rub I came up with using a great piece or Tuna to showcase its flavor and that its just not for red meat. Since it is pretty intense in flavor I used some wasabi cream to help mellow that out and some rice wine/soy vinegar to bring it all together. This works really well and is very addicting.

  • 6 oz tuna filet
  • Bandiola Steak Spice Rub
  • Vegatable oil

Wasabi Cream

  • one cup heavy cream
  • tablespoon wasabi powder

Dipping Sauce

  • 1/2 light soy sauce
  • 1/2 cup rice wine vinegar
  • few drops of sesame oil combine all ingredients and set aside



Start by making the wasabi cream, combine the cream and wasabi powder in a small pot and bring to a simmer. Taste and check for flavor intensity and adjust to your liking. Cool in the fridge until ready to use. When ready to plate put into a whip cream dispenser and shake before dispensing.

Roll your tuna steak in the Bandiola steak rub and let rest for 5 min. Now either a hot pan vegetable oil or a hot grill cook each side of the tuna for one min (as you can see in the photo how far to cook each side) and let rest for a min.

To serve slice a few wedges put on a plate, dispense a few flowers of the wasabi cream and finish with the sauce drizzle around the tuna.

To eat get a little of the wasabi cream on the tuna and dip in the sauce this is the perfect bite.
