Thank you Nobu for this one, I had this dish at his restaurant and figured I would do my version and this is a show stopper for taste. The tuna just blends in perfect with the oils and chili, garlic…..this is just an outrageous pasta dish.. not even the Italians do this.



Tuna with Soba Noodles

  • 3 oz Sushi grade tuna
  • 3 oz Soba noodles
  • Finley chopped chives


  • 2 Tablespoons sesame oil
  • 2 Tablespoons olive oil
  • 2 Tablespoons soy sauce
  • Teaspoon chili/garlic oil
  • 1 tablespoon toasted sesame seeds. Wisk together and set aside.


Take your tuna and cut it along the grain. Get as many solid pieces as you can then cut them into as thin strips as you can.
Now cook your soba noodles for 3 min then refresh then in ice bath take them out and dry.
Now in a bowl put the soba noodles and add half the dressing and carefully mix, now add the tuna and continue until its nicely woven into the pasta, check for seasoning and add a little kosher salt if needed.

Plate and sprinkle with the chives and go to town..this one rocks thank you Nobu!!
