A no chicken stock version of a healthy soup perfect for those pure vegetarians. Of course I finished it with some cows milk feta to give it a little more zing but this one does stand on its own and its very easy. This one perfect for lunchtime or best yet for your kids can be made in 30 min from fresh.

Ingredients

  • 2 pounds butternut squash cut into chunks
  • 1 pound apples peeled and chopped
  • 1 large onion chopped
  • 3 gloved of garlic
  • tablespoon Curry Powder Madras prefered
  • kosher salt
  • Fresh cracked pepper
  • olive oil

Directions

Put all the chopped apple, squash, garlic, onion. teaspoon kosher salt and curry powder on a baking tray and drizzle with some olive oil. Now into a 400 degree oven for about 20-30 min just when the squash is starting to caramelize a little. Take out let cool for a few min. Now put into a large pot and fill with  hot water from another pot just enough to cover the vegetables.  Now with a hand blender (get one and you wont live without it) wizz it up until it is nice and smooth. Now taste for seasoning and add salt and pepper as needed. Bring to a simmer and that’s it! Service with Yogurt and croutons or a little cream. Perfect protien food and dam healthy…. enjoy!
