2 Large Zucchini
2 Large Eggs Beaten
8 tablepoons Cornstarch
1 finely chopped onion
4 tablespoons Parmesan Cheese
1/4 teaspoon Baking Powder
1 Chopped tomato
1/2 cup fresh basil chopped
Vegetable oil for fying

Grate and Chop

Wash Zucchini a few times & trim the ends. Take a large bowl and line it with a thin kitchen cloth or cheesecloth.

Grate the zucchini into the bowl and add the chopped tomato.
Add salt and leave for 5-10 minutes. It will help to release the moisture.
Squeeze all the liquid with your hands.

Add the basil and onion and mix.

Mix it up

Add Parmesan cheese, eggs and cornstarch. Mix well with your hands.

Time to Fry

In a non-stick pan heat some vegetable oil until a small cube of bread , dropped in the oil, sizzles immediately temp about 375 degrees.

Using a spoon, add zucchini fritters to the pan, fry 2-3 minutes per side. You may need to add more oil.

Plate and Garnish

Plate and garnish with some fresh basil or parsley. Squeeze of lemon juice brighten them up and then serve with some sour cream.
