Apple Cake with Caramel Glaze

Ingredients
- 2 Large Eggs
- 2 Teaspoon Baking Powder
- 1 cup AP Flour
- 1/2 Cup Sugar
- 1 cup of milk
- 1 stick of butter (4 oz)
- One apple peeled and cut into a small dice
Caramel Glaze
- 2 Tablespoons Butter
- 1/4 cup packed brown sugar
- 2 tabelspoons half and half
Directions
Combine the eggs, butter and milk. Cream them together until the eggs are uniformly incorporated. Now combine all the dry ingredients and mix together and start adding to the wet ingredients until you have it mixed together. Add the diced apple and incorporate into the batter. (make sure not to over mix once it comes together your done)
Preheat oven to 350degrees and grease a loaf pan with vegetable oil or butter and pour the batter in. Bake for about 30 min or as much as 50 min depending on the pan and your oven. Bake until the blade of a knife comes out clean. Let cool for a few min and finish cooling out of the pan on a wire rack.
To make the glaze melt the butter and brown sugar in a pan on medium heat until bubbling stir for two min. Take off the heat and stir in the milk and let cool for 30 min or until its cool enough to drizzle on your apple cake. Slice and serve with a little butter if you wish!

If you want to get a more Apple Pie Flavor you can add a teaspoon of cinnamon to the batter

Benny....I love the idea of a caramel glaze over the apple cake...I will make this tomorrow and will let you know how it came out....It is so simple and therefor must be very delicious....Both my son and husband love anything caramel...and apple combination....
