These little molten balls of goodness hail from Sicily although I never did run into any of them when I was there. I have had enough on Arthur Avenue in the Bronx’s to know how to put these together. I used in fact left over sushi rice that I had and not Arborio rice as I think most recipes ask for but they turned out just and gooey and molten as ever. Easy stuff here give this a shot perfect snack for watching a game .

Ingredients

  • 2 cups of cooked rice room temp
  • 1/3 cup grated parmesan cheese
  • 1/3 cup of sliced parma ham or any soft cured meat you like
  • 1/3 cup chopped fresh basil
  • one egg

frying station:

  • one beaten egg
  • seasoned bread crumbs
  • canola oil @ 375 degrees for frying

Directions

Combine the cheese, egg, parma ham and chopped basil with the rice and mix until all ingredients have been evenly distributed. Now take a small amount of the rice mixture and form a ball in the your hand a little smaller than a golf ball. Now coat it in the beaten egg, shake off the excess and now dredge in the bread crumbs and let set for a few min. Fry at 275 degrees until golden brown about 2 min or so, drain and serve hot or at room temperature. Option to serve it is with marinara sauce but I think these are good to have hanging around the house of a Sunday room temp for company as they hold up very well.
