Bennys Breakfast Bowl (Custom)
Thought I’d share what it is I eat when not working on new recipes. So here is what I had for breakfast. It’s my upscale more healthy breakfast bowl with lots of shrimp and scallop. I use a Spanish method of incorporating the eggs into the seafood and onions that keep it really creamy and amazing taste. Here is the lowdown.

Ingredients

  • 3 large Cooked shrimp
  • One large diver scallop
  • One large scallion chopped
  • One chili pepper finely chopped
  • One glove of garlic minced
  • 2 tablespoons caramelized shallots
  • 3 cage free organic eggs
  • Crème fresh
  • Olive oil
  • Kosher salt

Directions

Crack three eggs into a bowl and add the caramelized shallots and whisk together with a fork.
In a hot pan add a good amount of olive oil and add the prawns, scallops, scallions, garlic and chili and toss quickly for about one min until it all starts to soften.

Now take it off the heat and while stirring slowly add in the egg mixture and keep stirring. Once you have added all the egg don’t stop stirring until it starts to tighten up to the point where it is creamy and add a teaspoon of crème fresh or sour cream and stir in.

Plate and serve with toast points or pita points. Finish with a little drizzle of olive oil or spicy olive oil.
