This is a great alternative to mashed potatoes especially if you are trying to watch your carbs. Your not gonna win out any of the fat but this is going to be just delicious and much lighter on your stomach. I personally love this almost more than a good mash potato.....almost.

Cheesy Cauliflower Gratin

Ingredients

  • one large head of cauliflower
  • 3/4 cup grated Gruyère or Sharp Cheddar Cheese
  • 1/4 cup of brie basicly a nice knob of it
  • 1/2 cup grated Parmesan cheese divided into two
  • 1/2 cup of half and half cream
  • 2 tablespoons of unsalted butter (1/4 stick)
  • kosher salt

Directions


Start by breaking down your head of cauliflower into florets and into salted boiling water for about 5-7 min until tender then drain.

Back on the stove medium heat add all the ingredients minus the one half of the Parmesan cheese and bring to a slight boil and start stirring until the cheese is all melted , the cauliflower is breaking down and it is starting to become slightly thick. (see photo)

Taste and check for seasoning, may need a little salt but that is doubtful depending on the type of cheese you use.

Into a buttered casserole pan or I used individual cast iron pans and top with the remaining Parmesan cheese evenly.

Into a 375 degree oven until it's nice and golden brown and you can see the cheese bubbling around the edges. (see photo)

Let rest for 3-5 min before serving to let everything come together just like you would a steak. (this goes perfect with steak BTW)
