Chicken and Smoked Paprika Stew with Parsley Dumplings

Ingredients
- ¾ cup Chicken breast
- ¾ cup Chicken thigh
- 1 cup chopped Leeks
- 1 chopped Shallot
- 2 cloves of chopped garlic
- Tablespoon sour cream
- 2 tablespoons of smoked paprika
- ¼ cup olive oil
- 2 cups chicken stock
- 2 bay leaves
- Squeeze of fresh lemon juice
- Couple pinches of dried chilies
Dumplings:
- 1 cup self rising flour
- 2 tablespoons half melted butter
- ½ cup chopped parsley
- Tablespoon grated parmesan cheese
- ½ cup milk or water
Directions
Add the shallots, garlic to olive oil and season with kosher salt. Now cut up the chicken into nice small pieces and sauté until starting to brown with the smoked paprika. Add the leeks and sweat with the chicken for a few min then add the stock and aromatics. Finally add the sour cream and cover and let simmer for at least 30 min if not an hour best . You will want to stir it and check for when the leeks break down into the liquid.
For the dumplings combine all ingredients into a bowl and mix until you have a nice firm ball but don’t compress it. To finish the dish take a golf ball size piece of the dumpling dough and put into the barley rolling boil of the stew and cover for 15 min. When you uncover it you should have a nice fluffy dumpling to serve in the stew.
