Something so simply I have had in some GOOD restaurant and they manage to F! it up. Chicken dry , under seasoned overdressed greens.. my god I could go on and on…but I’ll stop here is the simply and healthy way to prepare this simple French classic fool proof….let go.

Ingredients

  • Good fresh organic cage free chicken breasts
  • One shallot sliced thin and put into an ice bath to crisp it up
  • Handful of Rocket
  • Juice of one lemon
  • Kosher salt
  • Fresh cracked pepper

Vinaigrette:

  • ¼ cup extra virgin olive oil
  • ¼ cup groundnut or sunflower oil
  • 3 tablespoons white wine or rice wine vinegar
  • 2 tsp. sherry vinegar, optional
  • ½ tsp. kosher salt
  • Freshly ground black pepper

Directions

I know it is traditional to POUND the chicken breast out but I found by taking the breast and slicing it in half once, then doing it again with the fatter side of the chicken you can achieve similar results.

Now take the juice of one lemon and a good healthy drizzle of olive oil and pour this over the chicken and let marinade for 20 min. You will see that the chicken will actually start to cook a little around the edges and this is from the acid in the lemon.

Now I grilled this on a very very hot BBQ, I have a gas grill and I preheated this baby to almost 600 degrees. Take the chicken season it and put on the hottest spot on the grill and let char grill for about three min, flip over and finish one more min on the other side. Take off and tent with foil and let it rest.

Now take a good handful of rocket, add the shallot you had soaking in ice water and combine in a bowl together. Now add the vinaigrette around the rim of the bowl and push the rocket and shallots into it carefully making sure it is coated nicely check for seasoning and adjust.

Plate the chicken and me trying to be chefy I used a ring to organize my greens but you can just pile them on top of the chicken. Now finish with a little drizzle of good olive oil and voila!

Quick, simple, healthy and delicious!
