Chocolate Walnut Biscotti (Custom)
These little bites of biscotti goodness were just the thing to go with a nice sweet wine or with my coffee this morning to help stave off the cold outside in New York. You can flavor these with any combination you like I used chocolate and walnuts and that seemed to hit the spot just perfect. Have a go at these you won’t regret it.

Ingredients

  • Melted bittersweet chocolate, for dipping

Directions

Preheat the oven to 350° and line a baking sheet with parchment paper or these cool silicon mats which I use and are readily available now in most cooking stores.

In a standing electric mixer fitted with the paddle, beat the butter with the sugar at medium speed until creamy. Add the eggs, vanilla seeds and rum and beat until smooth. In a small bowl, whisk the flour with the cocoa powder, baking powder, salt and cinnamon. Add the dry ingredients and mix until incorporated.

On a lightly floured surface roll the dough out to about 1 ¼ inch thick. Brush the log with the egg white.

Bake the log for about 25 minutes, until the top is cracked and glossy and slightly firm to the touch. Let the log cool slightly.

Using a sharp chef's knife or serrated knife, cut the logs into 1/3-inch-thick diagonal slices.
Arrange the slices on the baking sheets and bake for about 20 minutes, until dry.

Let cool completely. Partially dip the biscotti in the melted chocolate and sprinkle lightly with chopped walnuts. Let cool for an hour and then enjoy!
