Cornish Hen with Chipoltle Cream (Custom)
Ok someone said to me after looking through some of my recipes “don’t you ever eat anything normal” well I do and I enjoy all kinds of food from sushi, to burgers but you can see a lot of those recipes in most places. I am just making food that I think may be a little different and perhaps something new that you might try and find delicious. Here is one of my favorite comfort food dishes that is just amazing in its taste and crunch. It like upscale fried chicken. Here we go , this one not for the diet crowd.

Cornish Hen with Chipoltle Cream

Ingredients

  • Whole Cornish game hen
  • Flour
  • Egg
  • Panko bread crumbs
  • Cream
  • 1 chipotle chili in adobo, pureed
  • Shallot
  • White wine
  • Sour cream
  • Salt
  • Pepper
  • Curley parsley
  • Grated garlic
  • Butter

Ingredients for sauce:

  • 2 tablespoons butter
  • 2 tablespoons minced shallots
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 3 tablespoons dry white wine
  • 1 cup sour cream, at room temperature
  • 1 chipotle chili in adobo, pureed
  • salt
  • white pepper, to taste

Directions

Cut the back bone out of the hen and flatten the entire body now separate the wings, thigh and breasts.
Now set up a traditional breading station, egg wash, flour and Panko bread crumbs .
Heat up some neutral oil like vegetable or peanut oil to 350 degrees and heat an oven to 350 degrees.
Now take the Hen portions and dredge in the flour, then egg then the Panko. Now fry for about one or two min until the Panko is a nice golden color.
Take out and finish in the oven for about 20 min. While the Hen is finishing you can make the cream sauce.

Sauce Directions:
1. Melt the butter in a skillet over medium-high heat and sauté the shallot and garlic for 2 to 3 minutes; add the broth and wine and sauté another 3 minutes.
2 .Reduce heat to medium-low and whisk in the sour cream, then the pureed chipotle.
3 .Simmer for a couple of minutes to heat through and season to taste with salt and white pepper.

Note: interesting twist, substitute vodka for the wine. Plate chicken and drizzle sauce around and over the chicken, finish with some chives or curly parsley and ENJOY!
