1 Craw Fish Scrambled Eggs

Decadent Breakfast or even better starter. People don't think that scrambled eggs could be a starter but this is proof it can be. There is a posh restaurant in the UK that does something similar but with lobster so this is my take. The key here is getting the scrambled eggs done to perfection almost like a risotto.

Ingredients

  • 2 organic free range eggs
  • one spring onion finely chopped
  • 6 or so Craw Fish tails blanched in hot salted water for 2 min
  • one slice of american cheese ya I know, just go with it
  • olive oil and a knob of butter

Directions

Take your blanched Craw Fish (or shrimp/lobster) and in a pan on medium low heat with a knob of butter warm the meat through for a few min and set a side.

Chop your scallion and add it to a bowl with two eggs  and start whisking until it is a uniform color.  Now in a pan or pot on medium low heat add some olive oil and pour the egg mixture in start mixing with a wooden spoon or spatula keep mixing and don't stop think of this like a risotto.

When the eggs start to come together add the slice of American cheese, a pinch of salt and keep mixing taking it off the heat if it gets to hot putting back on as needed.  When the eggs are set to your liking take out and plate followed by spooning the craw fish on the eggs.Pour the butter from the craw fish pan on the eggs as this will add a huge amount of flavor. Serve with some flat bread drizzled with olive oil.
