Filet of Beef with Pistachio Sauce (Custom)
After having just returned from Podgorica Montenegro where I find the food really good and some of it unique I had in a Italian Restaurant a “Filet of Beef with Pistachio” It was served on a celery root mash with this amazing almost steak Diane type of sauce. I did pretty good and coming close to making the sauce as I had it. Also to note that the cut of meat looks like filet mignon when in fact it was an eye round roast cut into a steak which I actually liked better as I want my meet to have a little chew to it and it has a little more flavor. I also seared the meat all the way around as his was just broiled from what I can remember. It was also served medium although I had requested medium rare but it worked as the sauce really was what the dish was about. Now this is a very rustic preparation but the flavor for me was fantastic.

Ingredients

  • 16 oz eye round roast or 2 8 oz beef filet
  • handful chopped chives

Pistachio Sauce:

  • Pan dripping from the steak
  • Teaspoon Dijon mustard
  • One chopped shallot
  • One clove of garlic chopped
  • Dash of Worcestershire sauce
  • ¾ cup half and half
  • ½ cup cognac
  • ¼ cup crushed pistachios

Directions

Season the steak with kosher salt and pepper and sear on all sides until nicely brown and finish in a 350 degree oven until about 140-145 internal temp, this will be about medium about 8-10 min.

Now take out of pan and let rest, add the shallots and garlic to the pan and cook until soft, now add the mustard and the cognac and let flambé now add the cream and bring to a boil, now strain it into a smaller sauce pan.

Add a handful of the chopped pistachios and let cook out for 3-5 min making sure to add any other juices from the steak into the sauce.

To plate put the steak in the middle and carefully pour the sauce over and finish with some more pistachios and the chopped chives. Now go to town on this baby and make sure you are in the mood for something rich and meaty! I hope I did my Montenegrin chef justice.
