Grilled Lamb Loin Chops with Chimichurri and Goat Cheese

Ingredients
- 2 thick cut lamb loins per serving
- goat cheese
Roasted Red Pepper Chimichurri
- one shallot chopped
- one clove of garlic minced
- one cup of roasted red peppers
- handful of fresh basil
- kosher salt and pepper to taste
- 3 tablespoons olive oil
Directions
Start by making the chimichurri, everything into the food and pulse for 10-20 seconds. you want it a little chunky not a puree, check for seasoning and set aside.
Grill your lamb to your preference.(you can also pa fry) I used a little olive oil, lots of kosher salt and pepper then grilled for 3 min a side to a medium rare and let rest for a few min.
Now pile some of the chimichurri on top and crumble some fresh goat cheese and either under the broiler until starting to brown or I used a blow torch to get the same results.
This looks great on a platter if you are going to serve a party it's colorful and tastes as it looks stunning!
