Half a pound of Spinach and Tomato Sandwich

Ingredients
- Good Italian Crusty Roll
- one pound of frozen spinach you can also use fresh
- 1/2 cup tomato sauce crushed tomatos, garlic, olive oil, basil and salt
- fresh mozzarella
- dried chili flakes
- kosher salt
- knob of feta or goat cheese
Directions
Hot Pan olive oil and spinach in with a some kosher salt. If frozen you want to cook it until all the water starts to evaporate and its looking dry. (same for fresh) now add the tomato sauce and the crumbled feta cheese and cook until most of the moisture has gone and you can start to hear the oil sizzle a bit that's when you know it ready.
Spoon it into your roll until almost to the top (see photo) and top with some fresh mozzarella, a little chili flakes and some olive oil.
Into a 450degree oven until the cheese is bubbling and the roll is crusty and golden. Take out let rest for a min and shave some Parmesan cheese on top and your done.
This baby is so full of flavor and the great nutrition of the spinach and tomato. Also note to make sure you get your rolls (if you don't make them yourself) from a local bakery. These have the following ingredients: Flour, Yeast, salt and water. That's all it should be.
