1 Indonesian Potato Cutlets

Perfect party snack! I make these all the time. I had my first one in Hong Kong many moons ago and was hooked. I make a big batch and freeze them so if guest come over and you want a savory bite to go with your conversation these are perfect. Shallow or deep fried then are ready in minutes.

Ingredients

  • one pound potatos (one large) baking potatos are best
  • 2 large shallots chopped
  • 1/2 teaspoon kosher or sea salt
  • one spring onion chopped
  • one egg beaten
  • panko bread crumbs
  • olive oil for frying

Directions

Start by frying your shallots in olive oil with a little kosher salt until nice and golden brown and set aside (don't throw the oil away!)

Cut your potato into same size pieces and cook in boiling salted water until fork tender.

Drain the potatoes and give them a light mashing. Now add the shallots (oil and all), spring onion and a touch of kosher salt. Now is the time to taste them for seasoning adding a little more salt if needed.

Now form the potatoes into 3 inch disk sizes about 1/2 inch thick and put in the freezer to set up for about 15 min. This will make it easier for the next step.

Now prepare the beaten egg in a bowl and the panko bread crumbs in another. Dredge the potatoes in the egg wash then into the panko bread crumbs and then back into the fridge for about 10 min to set up again. This will help the panko to adhere nicely to the potatoes. Heat a pan with about 1/2 inch of olive oil until just about smoking and shallow fry them on each side until golden brown. When they come out of the pan hit them with a little kosher salt and let them cool for 5 min.

These are best at room temp and go great with a Sweet Chili dipping sauce.

NOTE:

If you want to freeze them do it on the tray first then you can remove them to a plastic bag once frozen. When you take the tray out of the freezer let them site for a couple min then they will come right off very easily if you try to move them from the tray as soon as you take them out of the freezer they will stick.
