5 Inihaw na Baboy (Grilled marinated pork)

A favorite way of eating pork belly. Fell in love with this recipe the first time I was in the Philippines in 2000. This dish is perfect over a nice cold beer and a good conversation.

Inihaw na Baboy (Grilled marinated pork)

Ingredients

  • one pound pork belly
  • 4-5 cloves of garlic crushed
  • 1/2 cup 7-up or sprite
  • 1/2 cup vinegar
  • 2 tablespoons sugar
  • fresh cracked black pepper to taste

Vinegar Soy Dip

  • one small onion finely diced
  • 1 cup vinegar
  • 1/2 cup soy sauce
  • on red chili sliced

Directions

Make the Vinegar Soy dip combine all the ingredients and set a side.

Slice the pork belly lengthwise  about a 1/4 inch thick and combine it with the  garlic, vinegar, sprite, sugar and pepper into a bowl and marinate 3-4 hours or overnight.

When ready to cook discard the marinade and grill on each side for about 3-4 min until there is a nice char on the pork belly.

Serve with the Vinegar dip and some pickled mini cucumber or fresh vegetable.
