1 Marx Food Challenge Beans for Breakfast

marxfoods.com invited me to take part in another challenge and this one was Beans for Breakfast. So they sent me three kinds of beans Adzuki, Canary and Marrow beans. I quickly started to think what are all the great flavors I love for breakfast so I think I came up with a winning combination and hope you think so too!!

Ingredients

  • one cup Canaray beans
  • one cup marrow beans
  • one cup chopped onion
  • 2 garlic cloves chopped
  • 1/2 cup of Spec lardons you can use bacon also
  • one red and one green chili
  • thyme sprigs
  • one egg
  • tablespoon honey
  • crushed red peppers
  • tablespoon cream cheese
  • grated sharp cheddar
  • olive oil
  • knob of butter
  • kosher salt and pepper

Directions

Started by preparing the beans, soaked overnight and then I cooked them in chicken stock for 45 min.

Now hot pan olive oil start by rendering your Spec (its like Italian bacon) until the edges are starting to crisp up. Now add the onion and garlic and cook until translucent about 5 min.Add your beans along with a ladle of the stock and start cooking it down until almost dry.

Add the knob of butter and the cream cheese and cook until the cream cheese has melted into the beans. Add the thyme springs and the chilies and give it a few tosses in the pan.

Preheat over to 450 degree and shred some sharp cheddar cheese over everything  and into the oven. Cook until you see a little char on the peppers now add a tablespoon of honey drizzled around and back into the oven for about 3 min until you can see the oil and honey bubbling all around.

Fry an egg sunny side up and place on top of the salty, sweet with heat beans and finish with a little crushed chili peppers, kosher salt and a little pepper.

I had mine with some great multigrain bread from Amy's and this just rocked!
