Miso Braised Pork Hock with Soy

Ingredients
- one pork hock per person the braising liquid it good for 4 servings
- one large onion
- one red chili
- 10 cloves of garlic
- tablespoon miso paste
- 3 tablespoons soy sauce
- olive oil
- kosher salt and pepper
Directions
Start by putting the onion, garlic and chili in a food processor with a little olive oil and blitz until its a paste.
Now into a braising pan or clay pot and cook medium heat until fragrant. Now add the miso paste and cook another few min. Now put the pork hock in a fry it for about 5 min on each side adding a little water if necessary.
Now add water until the pork hock is covered and into a 280degree oven for approx 2 hours.
Take the lid off after 2 hours the pork hock should be really tender. Take out and let rest put the pot on the heat and start reducing and add the soy sauce. Once the flavor of the braising liquid is to your taste spoon some over the pork hock and serve.
This is rich, succulent and FATTY but super delicious and should be eaten as a treat once in a while.
