Classic taste new style execution which means I've cut the apples and celery into matchsticks instead of leaving them in bigger chunks. It makes for a nice texture in the mouth as well as more uniform distribution of flavor. The Walnuts needs to be in there and the spicy version is optional you can just use plain toasted if you like. This portion is good for a lunch size meal cut in half for a nice dinner starter.

Ingredients

  • one apple Honeycrisp or a good sturdy apple works best
  • one large celery stalk
  • red of green seedless grapes
  • 1/2 cup spicy candied walnuts

Dressing

  • one tablespoon mayonaise
  • one tablespoon sour cream
  • one teaspoon fresh lemon juice

Directions

Start by making the dressing combine the ingredients and adjust to taste, more lemon, less lemon (by adding more mayo and sour cream) and set aside in the fridge.

Peel and cut your apple into matchstick size pieces. Do the same with the celery and set aside with a little lemon juice on them to prevent browning.

Take about 6-8 grapes and cut them in half. If you are not going to use spicy candied walnuts (which you can buy but I'll provide a recipe below) then toast your walnuts slightly in a medium pan tossing often and don't take your eyes off of them should take 2 min..

Combine the apple and celery and add a dollop of the dressing and mix adjusting the amount to taste. Put on a plate and scatter the grapes and walnuts on top and garnish with some fresh greens.

 

Spicy Candied Walnuts (makes 3-4 portions for the salad, also great to eat on their own)

2 cups walnuts

tablespoon butter

tablespoon brown sugar

1/2 teaspoon of your favorite blackening seasoning

Method

Add butter and brown sugar to pan at medium high heat. Once melted add the blacken seasoning mix then add the walnuts. Once the sugar is bubbling keep stirring until it sticks to all the walnut about two min. Remove to a sheet to cool for 15 min before using.
