Ostrich Steak with Hollandaise

Ingredients
- one Ostridge steak mine was about 8oz
- grapeseed oil
- kosher salt and pepper
- knob of butter
Hollandaise Sauce
- one egg yolk
- 2 tablespoon melted unsaltedbutter
- fresh lemon juice to taste
- pinch kosher salt
Directions
Bring your Ostrich steak to room temp about 20-30 min. Now season with kosher salt and pepper making sure to really press it in the flesh and so there will be a good crust.
Hot pan grape seed oil (or vegetable oil) let it get to a smoking point then in with the steak. depending on thickness about 2-3 min a side, when you turn it over add a knob of butter to the pan and bast several times. My Ostrich was about an inch thick and that came out a perfect medium rare. Once out let it rest for at least 5 min.
Now make your hollandaise in a bowl add the egg yolk and a teaspoon or so or lemon juice and whisk until it has doubled in size. Now put the bowl over a simmering pot of water making sure the water does not touch the bottom and start whisking in the butter until it is incorporated. Taste it and adjust seasoning more lemon juice, salt etc.
Slice you Ostrich steak and paint the hollandaise all over it and enjoy immediately!
Ostrich its the new red meat!
