1 Pork Chop Milanese with Tangerine Honey Glaze

Got pork, no problem a little Italian influence and a bit of my own. Some of the flavor combination might sounds strange but they work....oh they work. The cinnamon on the chop is a trick that the Germans use for the breading on a weinersnitchel. The tangerine honey glaze just works as pork is paired with fruit for many recipes (pork chops and apple sauce anyone)

Ingredients

  • one thick cut center cut pork chop one inch thick cut
  • one cup panko bread crumbs per chop
  • one beaten egg
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • olive oil and knob of butter

Salad Topping

  • small onion chopped
  • 1/3 to 2/3 fresh basil and greens
  • cherry tomatos chopped
  • juice of 1/4 lemon
  • kosher salt and pepper to season

Tangerine Honey Glaze

  • one cup of fresh orange or tangerine juice
  • 2 tablespoons honey

Start by making your salad just combine the ingredients minus the lemon juice and keep chilled until use

In a small pan add the tangerine juice and honey. On medium heat start reducing the liquid until it becomes a thick syrup almost the consistency of honey. Set aside and keep warm.

Set up your breading station, beaten egg in one bowl and the panko, cinnamon and kosher salt in another.

Take your thick cut pork chop and cut the fat in a couple of places so it does not curl when your cooking it. Now taking a meat mallet pound it out until it has almost doubled in size and is a pretty even thickness about a 1/4 of an inch or so.

Into the egg wash and into the panko making sure you get the entire chop covered bones and all. Now into a hot pan with olive oil and brown the first side, turn over add the knob of butter and brown the second side for about a min then into a 375 degree oven for about 6-7 min. Take out season with kosher salt and let rest for a min.

To plate add the lemon juice to the salad toss well then add a even layer to the top of the pork chop and then drizzle the glaze around the plate so you can mop it up with your chop.
