0 Quick Mushroom and Spinach Quiche

The reason its called QUICK is I've taken the most time consuming item out of the equation the pie shell. This is something you can make at a drop of a hat if you keep some good quality pie shell sheets in your freezer. You can also vary the filing to your taste to ham and cheese, leeks and bacon, broccoli and cheese. No limit to combinations.

Ingredients

  • 1 nine inch ready made good quality pie crust sheet
  • 4 large eggs
  • 2 cups cream
  • 2 cups chopped mushrooms
  • 1 pound fresh or frozen spinach
  • one clove of garlic chopped
  • 1/4 cup dry white wine (optional)
  • 2 cups shredded sharp cheddar cheese
  • olive oil

Directions

Start by sauté the mushrooms and spinach together in olive oil and the garlic. Season well with salt and pepper and cook until most of the moisture has gone out and the mushrooms are starting to caramelize a little. You can also add a splash of white wine during the cooking but that is optional.

Take your pie shell and into a 9inch (23cm) buttered pan and blind bake it at 450 degrees until its just starting to turn brown about 6-8 min.

Combine the eggs and cream and whisk together well. Add a 1/2 teaspoon of salt. Now add in your sauté mushrooms and spinach and mix well. Pour into the pie shell and add the cheese making sure its evenly distributed. You can add some decorative garnish like I cut mushroom slices and added them on top to show people what's inside the quiche.

Bake at 325 degrees for about 40-45 min. Let cool for at least 20 min before serving. Can be cut into portions and freeze for those nights when you just don't feel like cooking. You will have something healthy and amazing to enjoy.
