Razor Clams with Spicy Sauce (Custom)
All the way from Connecticut it’s the razor clam, mysterious, beautiful and DELICIOUS! I was at Chelsea Market here in New York and they had these in fresh today and caught today I could not resist. I steamed a few and just ate them as is and really enjoyed their light sweet flavor but decided I want to take these babies to a new place so I hope I did…..I ate every one of these and I wanted more…..follow me on this one..

Razor Clams with Spicy Sauce

Ingredients

  • Razor clams
  • Spring onions
  • Spicy sauce
  • ¼ cup Japanese mayo

Spicy sauce:

  • 2 tablespoons saracha sauce
  • ¼ teaspoon chili oil
  • Mix together well and chill

Directions

Take the Razor clams and blanch them in salted hot water for 30 seconds. Now open them up and take the skirt off them leaving the LEG. Some will come off from the shell no problem just set them aside. Now find the best looking shells and place the legs in them. Take some of the scallions and drop them around the clams. Now spoon in some of the spicy sauce and put some more scallions around.

Put in a 450 degree oven until they start to bubble, mine took about 3 min. Now when you take them out if you have a blow torch caramelize the outside. Now plate them and finish with some radish sprouts and EAT!
