Here is my peanut butter cookie recipe. It reminds me of the ones my mom used to make, I like this recipe and I eat these until I see blue dots :)

Ingredients

  • 1/2 cup peanut butter I used my own homemade in food processor but use a good quality organic store bought if you can
  • 1/2 cup unsalted butter
  • 1/2 cup caster sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 1/4 AP flour sifted
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 3 Reeses Peanut butter cups optional but a nice touch

Directions

Combine the sugar, eggs, peanut butter, butter and cream together, now add the flour, salt and baking soda and mix together (I used my hand and work it like dough until mixed)

Take your Reese's Peanut Butter cups and cut them into quarters set aside

Preheat your oven to 375 degrees, and start by making about a golf ball size piece of dough and roll it into a ball. Now onto a greased baking sheet or silicon baking mat , space out the balls of cookie dough and then using fork push them down and make them flat and the same thickness.

You can now add to the center a piece of the Reese's Peanut Butter cups. Now bake for about 12 min keeping an eye on them so when the edges are just started to brown take them out. These will be slightly crunchy on the outside and soft on the inside. If you want a chewy cookie take them out a couple minutes earlier.

When you take them out of the oven let them sit for one min then move to a cooling rack. To eat pour large glass of milk, put several on a plate and eat them in a closet where know one can see you :)
