Perfect pockets of snack goodness. These are great to stuff in your bag for on the run as they are perfect at room temp and keep for a few hours.

Ingredients

  • Basic Pizza Dough Recipe store bought pizza dough is good as well
  • One bag frozen chopped Spinach
  • 2 cloves of garlic chopped
  • 8 oz of cream cheese
  • 1/2 teaspoon ground nutmeg
  • one cup crumbled feta cheese
  • one large onion chopped
  • one egg beaten

Directions

Start by sauté the garlic and onion in olive oil with a little kosher salt and pepper until translucent (no color just cooked through). Now add the spinach and cook until most of the water has evaporated and it's looking dry. Add the cream cheese, feta and nutmeg keep stiring until mixed together well. Taste and adjust to your liking (maybe add a little lemon juice, more cream cheese etc). Once it is a thick mixture set aside and let cool (important don't use it while it's hot).

Take your bread dough (I assume you have it ready to use) and roll it out until its about 1/8 of an inch thick (see photos) and using a ring mold about 4 inch in diameter (or you can use the top of a larger coffee cup) cut out circles of the dough.

Put a dollop (about a rounded heaping teaspoon) in the middle and follow the photo on how to fold it together to make the nice looking parcel. If you want to go simple just bring one side of the circle to the other making a little purse and pierce the edges and that will work find as well.

Lay them on a baking tray and if you want to give them a little more gloss brush them with egg wash. You can add some sea salt, or sesame seeds as well.

Bake at 425 degrees until nice and brown. Onto a rack to cool, best eaten at room temp or slightly warm.
