0 Scallop Potatos and Grapes

This is a dish that is a great starter for an elegant dinner. This one actually does not take long but you have to make sure everything is cooked perfectly for it to work. The play between the sweet of the grapes and the salty of the potato and scallop works just perfect and this is a very light dish to boot.

Scallop Potatos and Grapes

Ingredients

  • one large diver scallop
  • russet potato peeled
  • seeless grapes of your choice
  • unsalted butter
  • olive oil
  • kosher salt
  • sqeeze of fresh orange juice

Directions

Start by cubing the potato and the scallop to about 1/2 inch keep them both the same size and same amount so whatever you got for the scallop use the same amount for the potato.

Prepare the grapes heat a small pot of olive oil to about 200degrees and drop the grapes in for about a min until they are just starting to break the skin take out and drain.

Hot pan with a little butter and olive oil season the potatoes and cook until nice and golden brown on the outside on all sides. Season the scallops and do the same probably take about one min.

To plate arrange in a square pattern like in my photo and finish with a little drizzle of fresh orange juice and a little more seasoning.

Simple light and tasty!
