3 Simple Shrimp Gratin

You can knock this out for a quick lunch in ten min or a perfect starter to an elegant meal. Use cooked or raw shrimp I happen to have some leftover cooked shrimp and worked out perfect.

Ingredients

  • 7-10 medium shrimp cooked blanched one min shock in ice bath
  • panko bread crumbs
  • tablespoon good mayo
  • teaspoon lemon juice
  • one small clove of garlic finely chopped
  • handful of chopped parsley
  • pinch of chili flakes
  • teaspoon of unsalted butter

Directions

Start by mixing the mayo, lemon juice, garlic, chili flakes and parsley together. Taste for seasoning you may want more lemon juice etc.

Line a shallow ramekin with the shrimp and spoon in the mixture. Add a few small pats of butter and cover with panko breadcrumbs.

Into a 425 degree oven until you see the mixture bubbling and the panko is nice and brown.

Serve with buttered toast points and maybe a wedge of lemon. Rich, creamy and simple!
