Spicy Salmon Roll (Custom)
You can and you will make this at home…..one day nothing better than being at the sushi bar than to make these at home. It is really not that hard and much more inexpensive. Once you make the rice you can go to town and really get creative as to what you put inside your creation. Here is a quick 411 on how I did this….sushi chefs feel free to chime in and correct me every step of the way.

Ingredients

  • Sushi rice
  • Spicy salmon
  • 4 oz salmon filet or trimming from making nigiri
  • 1 oz spicy mayo
  • Finley chopped scallion. Chop the salmon until it’s almost a smooth texture, now add the scallion and spicy sauce and mix well, taste for balance and adjust as your preference.
  • One sheet of nori cut into two you can toast it a little with a blow torch or wave it over a stove flame.

Place the nori on a sushi mat covered in cling film.
Now take about 4 oz of the rice and spread it evenly.
Now flip it over and place some of the spicy salmon in the middle, now it’s time to roll, pretend it’s a carpet and your rolling it tight. Once you get it rolled use the mat to apply some pressure to give it some shape as well.

Now cut and garnish with some more spicy sauce and some radish sprouts or I used pea shoots. Spicy Salmon rolls…..DONE!
