Thai Muscle Salad (Custom)
Started at the gym today and needed something fresh and exciting after my workout and this did it. I took steamed mussels and a combination of chili lime fish sauce dressing and Thai peanut dressing to just blow the flavors wide open. You can see I used some rice noodles which I put the chili lime dressing on and I used the peanut dressing on the greens.

Ingredients

  • Bib lettuce
  • Fresh basil
  • Fresh mint
  • Fresh cilantro
  • Shredded carrots
  • Soy bean sprouts
  • Spring onion
  • Fresh chopped chili
  • Clear rice noodles

Dressing #1

  • 4 tablespoons fish sauce
  • One small finely chopped shallot
  • One tablespoon brown sugar
  • 1 glove of garlic grated
  • 1 teaspoon grated ginger
  • Juice of one lime
  • 1/2cup chopped cilantro
  • ½ teaspoon chili oil. Whisk all ingredients together.

Dressing # 2

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup coconut milk
  • 3 tablespoons water
  • 3 tablespoons fresh lime juice
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon hot sauce
  • 1 tablespoon minced fresh ginger root
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro

Directions

I made a mix of the greens and add the carrots and chili.
I add the peanut dressing and dress in a separate bowl. In another bowl add the chili lime dressing to taste to the rice noodles.
Add some chopped chili’s in and toss.

Put both side by side in a bowl and finish with mussels, chicken or whatever protein you desire finish with some fresh cilantro and enjoy.
