1 Egg, Dill and bacon mini bite

I made one perfect bite of this Tapa which is where I made the mistake, I should have made FIFTY! This will just blow you away with unique flavor. Imagine that perfect bite of scrambled egg, apple smoked bacon, fresh dill and some mouth popping Tobiko on top. Beautiful and amazing! Make these ahead of time and they are good slightly chilled or room temp…..follow me.

Ingredients
- Benny’s egg salad mix <4 hardboiled eggs, 2 tablespoon good mayo, tablespoon good whole grain mustard and fresh dill to taste. Mash eggs add ingredients and mix.
- Crispy bacon
- Good rye bread
- Tobiko roe
Directions
Toast the rye bread and using a one inch or around there ring mold punch out a circle of the bread. Now start to layer, put a layer of the egg salad, now break up a piece of bacon and add a layer of the bacon, now another layer of the egg salad. Top it off with a nice layer of Tobiko row and carefully pull of the mold and finish with a piece or green and sprinkle some of the Tobiko around for more presentation.
