0 One Minute Roasted Catfish and Garlic

Love this quick and easy way to do fish. It does not have to be Catfish you can use any white fish or even salmon. This is a true taste of the Med, if you really want to enjoy and showcase the real taste of a great piece of fresh fish this is the way.

Ingredients

  • 8 oz or so Catfish filet
  • one large clove of garlic sliced
  • 2 tablespoons olive oil
  • 1 tablespoon sherry vinegar
  • kosher salt
  • chopped parsley

Directions

Start with the olive oil in a small pot and add the sliced garlic and fry at medium heat until garlic is brown. Make sure not to burn the garlic and set aside.

Take your fish filet and slice it about a 1/4 inch thick as you can see in the photo and lay out on a pan or baking tray making sure the fish slices don't touch.

Pre heat your broiler and raise the rack so it's as close to the heat as possible. Now broil the fish for one min maybe a few seconds more , it should be just cooked and really juicy.

Lay fish slices on a plate, spoon the sherry vinegar, the garlic and oil over top and finish with parsley and kosher salt to taste.
